Frozen Yogurt Cookie Dough Energy Pops

Ingredients
  

1 cup Greek yogurt (plain or vanilla)

1/4 cup almond butter or peanut butter

1/4 cup maple syrup or honey

1 tsp vanilla extract

1 cup rolled oats

1/2 cup mini chocolate chips (or chopped dark chocolate)

1/2 cup finely chopped nuts (walnuts or pecans work well)

1/4 tsp sea salt

1/4 cup mini marshmallows (optional)

Instructions
 

Mix the Base: In a large mixing bowl, combine the Greek yogurt, almond butter (or peanut butter), maple syrup (or honey), and vanilla extract. Mix until smooth.

    Incorporate Dry Ingredients: Add the rolled oats, mini chocolate chips, and finely chopped nuts to the mixture. Sprinkle in the sea salt and mix well until all ingredients are evenly combined. If desired, fold in the mini marshmallows for an extra chewy texture.

      Prepare Popsicle Molds: Spoon the mixture into popsicle molds, patted down firmly to ensure they hold together. Leave a small space at the top to allow the mixture to expand slightly as it freezes.

        Insert Sticks: If using popsicle sticks, insert them into the molds now. If your molds do not allow for sticks, you can simply cover them and freeze as is.

          Freeze: Place the filled molds in the freezer for at least 4 hours, or until the pops are completely firm.

            Unmold and Serve: Once frozen, run the molds under warm water for a few seconds to help release the pops. Gently pull them out and serve immediately. Enjoy your healthy treat on a hot day!
