Ingredients

2 cups frozen cherries, thawed and pitted

1 cup vanilla Greek yogurt

1 tablespoon honey (or maple syrup for a vegan option)

1 teaspoon vanilla extract

1 cup graham cracker crumbs

1/4 cup unsalted butter, melted (or coconut oil for a vegan option)

1/4 teaspoon cinnamon

1/4 teaspoon salt

Whipped cream for serving (optional)

Fresh cherries for garnish (optional)

Instructions

Prepare the Cherry Filling: In a mixing bowl, combine the thawed and pitted cherries with honey and set aside to allow the flavors to meld for about 10 minutes.

Make the Yogurt Mixture: In another bowl, mix together the Greek yogurt, vanilla extract, and a pinch of salt until smooth and well combined.

Prepare the Crust: In a separate bowl, mix together the graham cracker crumbs, melted butter (or coconut oil), cinnamon, and salt. Stir until evenly combined and the mixture resembles wet sand.

        Assemble the Bombs:

          - Mold the Crust: Lightly grease a muffin tin (preferably silicone for easy removal). Press the crumb mixture into the bottom and sides of each muffin cup to form a small crust, leaving a bit of room at the top for the yogurt and cherry filling.

            - Layer Filling: Spoon a layer of the cherry mixture into each crust, then top with a generous dollop of the yogurt mixture, smoothing it out to fit.

Freeze: Place the muffin tin into the freezer and allow the bombs to freeze for at least 4 hours, or until completely solid.

Serve: After the Frozen Yogurt Cherry Pie Bombs are set, carefully pop them out of the muffin tin. Serve with a dollop of whipped cream if desired, and garnish with fresh cherries.

Enjoy: These delightful treats are perfect as a refreshing dessert on a hot day!
