8 whole grain or almond flour cookies (store-bought or homemade)

Chocolate chips or additional chopped walnuts for topping (optional)

Prepare the Yogurt Mixture: In a medium bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and cinnamon (if using). Mix well until completely combined and smooth.

    Slice the Bananas: Peel the bananas and slice them into 1/4-inch thick rounds. You'll need about 16 slices for 4 sandwiches.

      Assemble the Sandwiches: Lay 4 cookies on a clean surface. Using a spoon or spatula, spread a generous dollop of the yogurt mixture over each cookie.
