Frozen Yogurt Almond Joy Pops

2 cups Greek yogurt (plain or vanilla)

1/2 cup sweetened shredded coconut

1/2 cup almond butter

1/4 cup honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1/2 cup dark chocolate chips

1/4 cup chopped almonds (for topping)

Pinch of sea salt

Prepare the Yogurt Base: In a mixing bowl, combine the Greek yogurt, shredded coconut, almond butter, honey or maple syrup, and vanilla extract. Mix well until smooth and creamy.

    Taste and Adjust: Taste the yogurt mixture and adjust the sweetness if desired by adding more honey or maple syrup.

      Melt the Chocolate: In a microwave-safe bowl, melt the dark chocolate chips in 30-second intervals, stirring in between, until fully melted and smooth.

        Layer the Pops: Take a popsicle mold and spoon a layer of the yogurt mixture into each mold, filling them about halfway. Then drizzle a little of the melted chocolate on top of the yogurt. Use a toothpick or skewer to swirl the chocolate into the yogurt slightly for a marbled effect.

          Add More Layers: Continue to add more yogurt mixture until the molds are almost full. Drizzle more melted chocolate on top and sprinkle with chopped almonds and a pinch of sea salt.

            Insert Sticks: If the mold has stick holders, insert the popsicle sticks. Otherwise, place them in the freezer for about 30 minutes until they are slightly frozen, then insert sticks.

              Freeze: Place the molds in the freezer and freeze for at least 4-6 hours or until firm.

                Unmold and Serve: To remove the pops, run the molds under warm water for a few seconds to loosen. Gently pull them out and enjoy!
