Ingredients

2 cups plain Greek yogurt (full-fat or low-fat)

2 tablespoons honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1 cup fresh raspberries (or frozen, thawed and drained)

1/4 cup chopped nuts (such as almonds or pistachios)

1/4 cup unsweetened shredded coconut (optional)

1 tablespoon chia seeds (optional for added nutrition)

Instructions

Prepare the Yogurt Mixture:

    - In a medium bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Stir well until the mixture is smooth and fully blended.

      Line the Baking Sheet:

        - Line a baking sheet (approximately 9x13 inches) with parchment paper, allowing some overhang for easy removal later.

          Spread the Yogurt:

            - Pour the yogurt mixture onto the prepared baking sheet and use a spatula to spread it into an even layer about 1/2 inch thick.

              Add the Toppings:

                - Scatter the fresh raspberries evenly on top of the yogurt layer. Gently press them into the yogurt.

                  - Sprinkle the chopped nuts, shredded coconut, and chia seeds (if using) over the top, ensuring even coverage.

                    Freeze:

                      - Place the baking sheet in the freezer and allow the yogurt bark to freeze for at least 4 hours or until it's solid.

                        Break Into Pieces:

                          - Once frozen, remove the baking sheet from the freezer. Using the parchment overhang, lift the yogurt bark out of the baking sheet and place it on a cutting board. Break it into pieces of your desired size.

                            Store:

                              - Store the pieces in an airtight container in the freezer for up to 2 weeks. Serve straight from the freezer for a refreshing snack!
