Frozen Pineapple Banana Pops

Ingredients
  

2 ripe bananas

2 cups fresh or frozen pineapple chunks

1 cup coconut milk (canned or carton)

2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

1/4 teaspoon salt

Optional toppings: shredded coconut, chopped nuts, or mini chocolate chips

Instructions
 

Prepare the Fruit: If using fresh pineapple, peel, core, and chop the fruit into chunks. For frozen pineapple, ensure it's slightly thawed for easy blending.

    Blend the Mixture: In a blender or food processor, combine the ripe bananas, pineapple chunks, coconut milk, honey or maple syrup, vanilla extract, and salt. Blend until the mixture is smooth and creamy, scraping down the sides as necessary.

      Taste and Adjust: Taste the mixture and adjust sweetness by adding more honey or syrup if desired. Blend briefly to mix.

        Pour into Molds: Pour the fruit mixture into popsicle molds, leaving a little space at the top as the mixture will expand when frozen.

          Insert Sticks: If your molds allow, insert popsicle sticks into the mixture. If using regular cups, you can insert sticks after about 1-2 hours of freezing, once the mixture has set enough to hold the sticks upright.

            Freeze: Place the molds in the freezer and freeze for at least 4-6 hours or until completely solid.

              Unmold and Enjoy: To remove the pops from the molds, run warm water over the outside of the molds for a few seconds. Gently pull the pops out. If desired, roll the pops in shredded coconut, chopped nuts, or sprinkle mini chocolate chips for a fun touch!

                Storage: Store any leftover pops in an airtight container in the freezer for up to 2 weeks.
