Ingredients

2 ripe bananas

1/2 cup creamy peanut butter (or almond butter for a twist)

1/4 cup dark chocolate chips or chopped dark chocolate

1 tablespoon coconut oil (optional, for smoother chocolate)

Sea salt (for sprinkling, optional)

Chopped nuts or granola (for rolling, optional)

Instructions

Prep the Bananas: Peel the bananas and slice them into 1-inch thick rounds. Arrange the banana slices on a parchment-lined baking sheet, leaving space between each piece.

Peanut Butter Layer: Using a small spoon or a piping bag, place a dollop of peanut butter onto half of the banana slices. Top with the remaining slices, creating little banana peanut butter sandwiches.

Freeze the Sandwiches: Place the baking sheet with the banana sandwiches in the freezer for about 30-60 minutes, or until firm.

Melt the Chocolate: While the bananas are freezing, melt the dark chocolate chips along with coconut oil (if using) in a microwave-safe bowl. Heat in 20-30 second intervals, stirring in between until smooth.

Dip the Bites: Once the banana sandwiches are firm, remove them from the freezer. Quickly dip each sandwich into the melted chocolate, making sure to cover them fully.

Add Toppings: For an extra crunch, sprinkle with sea salt, or roll the chocolate-covered bites in chopped nuts or granola before the chocolate sets.

Final Freeze: Return the fully dipped banana bites to the parchment-lined baking sheet and place them back in the freezer. Freeze for an additional 1-2 hours until the chocolate is set and the bites are completely frozen.

Serve and Enjoy: Once frozen, enjoy these delightful treats directly from the freezer! They can also be stored in an airtight container for up to a month (if they last that long!).
