Frozen Orange Creamsicle Bars

Ingredients
  

1 cup fresh orange juice (about 4-5 oranges)

Zest of 2 oranges

1 cup coconut milk (canned, full-fat for creaminess)

¼ cup honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

½ cup Greek yogurt (optional for extra creaminess)

Pinch of salt

½ cup finely chopped dark chocolate or chocolate chips (optional, for swirl)

Instructions
 

Prepare the Orange Juice: Squeeze the fresh oranges to get 1 cup of juice, and don’t forget to zest two of them for added flavor.

    Mix the Base: In a large bowl, combine the fresh orange juice, orange zest, coconut milk, honey or maple syrup, vanilla extract, Greek yogurt (if using), and a pinch of salt. Whisk everything together until smooth and well-combined.

      Taste Test: Give the mixture a quick taste and adjust the sweetness if needed by adding more honey or maple syrup.

        Add Chocolate (Optional): If you’re adding chocolate for swirls, gently fold in the chopped dark chocolate or chocolate chips now. This will give a delightful surprise in each bite!

          Pour into Molds: Carefully pour the mixture into popsicle molds, filling each mold ¾ full to allow for expansion.

            Insert Sticks: If your molds require sticks, insert them into the center of each mold.

              Freeze: Place the molds in the freezer and freeze for at least 4-6 hours or until completely solid.

                Unmold and Serve: To release the bars, run the molds under warm water for a few seconds until they loosen. Gently pull them out and serve immediately or store them in a zip-top bag in the freezer for up to two weeks.
