Ingredients

1 cup almond flour

1/2 cup rolled oats

1/4 cup honey or maple syrup

1/4 cup coconut oil, melted

Zest of 1 lemon

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup Greek yogurt

1/4 cup fresh lemon juice (about 2 lemons)

1 tablespoon powdered sugar (optional, for sweetness)

1/2 teaspoon lemon extract (optional, for extra flavor)

Sliced almonds for topping

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Crust: In a mixing bowl, combine almond flour, rolled oats, honey (or maple syrup), melted coconut oil, lemon zest, vanilla extract, and salt. Stir until the mixture is well combined and crumbly.

Form the Cups: Line a muffin tin with paper liners. Press a tablespoon of the crust mixture into the bottom of each liner, flattening it to form a base. Ensure it's packed tightly to hold its shape after freezing.

Make the Filling: In another bowl, whisk together Greek yogurt, fresh lemon juice, powdered sugar (if using), and lemon extract (if using) until smooth and creamy. Adjust sweetness as desired.

Assemble the Cups: Spoon the lemon yogurt filling over the crust in each muffin cup, filling them to the top. Smooth the surface with the back of a spoon.

Add Toppings: Sprinkle slices of almonds on top of the yogurt layer for added crunch.

Freeze: Place the muffin tin in the freezer for at least 4 hours or until the cups are completely frozen.

Serve: Once frozen, remove the cups from the muffin tin. Peel off the paper liners and serve immediately, garnished with fresh mint leaves for extra flair, if desired.

Storage: Store any leftovers in an airtight container in the freezer for a refreshing treat anytime!
