2 medium carrots, peeled and chopped

1 cup fresh pineapple chunks (or canned in juice, drained)

1 cup plain Greek yogurt

2 tablespoons honey (adjust based on sweetness preference)

1 teaspoon vanilla extract

1 tablespoon lemon juice

Pinch of salt

Instructions
 

Prepare the Carrots: Place the chopped carrots in a saucepan with enough water to cover them. Bring to a boil and cook for about 10-15 minutes, or until the carrots are really tender. Drain and let cool slightly.

    Blend the Mixture: In a blender or food processor, combine the cooked carrots, pineapple chunks, Greek yogurt, honey, vanilla extract, lemon juice, and a pinch of salt. Blend until completely smooth and creamy.

      Taste and Adjust: Taste the mixture and adjust sweetness by adding more honey if desired. Blend again briefly to incorporate any additional sweetener.

        Fill the Molds: Pour the mixture evenly into popsicle molds, leaving a little space at the top as they may expand. If desired, you can add small pieces of pineapple or carrot for added texture.
