Ingredients

1 cup almond butter (smooth, unsweetened)

2 cups fresh or frozen blueberries

3 tablespoons maple syrup (or honey)

1 teaspoon vanilla extract

1/4 cup unsweetened shredded coconut (optional, for topping)

A pinch of sea salt

1/4 cup dark chocolate chips (for drizzling, optional)

Instructions

Prepare the Base: In a medium bowl, mix together the almond butter, maple syrup, vanilla extract, and a pinch of sea salt until smooth and creamy.

Layer the Blueberries: Line an 8x8 inch baking pan with parchment paper, allowing some overhang for easy removal. Pour half of the almond butter mixture into the prepared pan and spread it evenly across the bottom.

Add Blueberries: Evenly distribute the blueberries on top of the almond butter layer. Gently press them down to ensure they stay in place.

Top with Almond Butter: Pour the remaining almond butter mixture over the blueberries and smooth it out to cover them completely.

Add Toppings: Sprinkle the shredded coconut on top for added texture and flavor. If desired, melt dark chocolate chips in a microwave-safe bowl, stirring every 30 seconds until fully melted. Drizzle the melted chocolate over the bark in a decorative pattern.

Freeze: Place the pan in the freezer for at least 2 hours or until completely set.

Cut and Serve: Once frozen, lift the bark out of the pan using the parchment paper overhang. Cut into bite-sized pieces with a sharp knife. Store any leftovers in an airtight container in the freezer.
