Frozen Berry Smoothie Bars

2 cups mixed frozen berries (strawberries, blueberries, raspberries)

1 ripe banana

1 cup Greek yogurt (plain or vanilla)

1/2 cup coconut milk (or almond milk)

2 tablespoons honey or maple syrup (adjust to taste)

1 tablespoon chia seeds (optional for added texture)

1 teaspoon vanilla extract

A pinch of salt

Fresh berries and granola for topping (optional)

Instructions
 

Begin by gathering all your ingredients and a blender. Make sure your frozen berries are measuring up to 2 cups and are thawed slightly for easier blending.

    In the blender, add the mixed frozen berries, ripe banana, Greek yogurt, coconut milk, honey or maple syrup, chia seeds (if using), vanilla extract, and a pinch of salt.

      Blend on high speed until the mixture is smooth and creamy. Scrape down the sides as needed to ensure all ingredients are well combined. If the mixture is too thick, add a little more coconut milk to reach desired consistency.

        Once blended, taste the mixture and adjust sweetness if necessary by adding more honey or maple syrup.

          Prepare a square or rectangular baking dish (about 8x8 inches or 9x5 inches) by lining it with parchment paper, allowing some overhang for easy removal later.

            Pour the smoothie mixture into the lined baking dish, smoothing the top with a spatula or spoon to level it out.

              If desired, sprinkle fresh berries or granola on top of the smoothie mixture for added texture and flavor.

                Cover the dish with plastic wrap or foil and place it in the freezer. Allow it to freeze for at least 4 hours or until solid.

                  Once set, remove the smoothie bars from the dish using the parchment overhang and place them onto a cutting board. Cut them into bars or squares, as preferred.

                    Store any leftover bars in an airtight container in the freezer for up to a month. To enjoy, simply take out the desired amount and let them sit for a few minutes to soften slightly before eating.
