2 cups rolled oats

1 cup mixed frozen berries (e.g., blueberries, raspberries, strawberries)

1/2 cup almond or peanut butter (smooth)

1/4 cup honey or maple syrup

1/4 teaspoon salt

1 teaspoon vanilla extract

1/2 teaspoon cinnamon (optional)

1/4 cup chopped nuts (e.g., almonds, walnuts) for added crunch

Cooking spray or parchment paper for lining the pan

Instructions
 

Preheat your oven to 350°F (175°C). Prepare a 9x9 inch baking pan by either spraying it with cooking spray or lining it with parchment paper for easier removal.

    In a large mixing bowl, combine the rolled oats, salt, and cinnamon (if using). Stir well to ensure the dry ingredients are evenly mixed.

      In a medium microwave-safe bowl, add the almond or peanut butter and honey/maple syrup. Microwave for 20-30 seconds or until the mixture is slightly warm. Stir until the mixture is smooth and well-combined.

        Add the vanilla extract to the warm mixture and stir until incorporated.

          Pour the wet mixture over the dry oats in the large bowl and mix until evenly coated. If the mixture is too dry, you can add a splash of water or more honey to help combine.

            Gently fold in the frozen mixed berries and chopped nuts, ensuring not to crush the berries too much to keep their shape.

              Transfer the mixture to the prepared baking pan and press it down firmly with the back of a spatula or your hands to create an even layer.

                Bake in the preheated oven for 20-25 minutes or until the edges are slightly golden and the center is firm to the touch.

                  Remove from the oven and let cool completely in the pan on a wire rack. Once cooled, lift the bars out using the parchment paper and cut them into squares or rectangles.

                    Store the bars in an airtight container in the fridge for up to a week, or freeze them for longer storage.
