Ingredients

2 ripe bananas

1 cup mixed berries (strawberries, blueberries, raspberries)

1 cup coconut cream (chilled)

2 tablespoons honey or maple syrup

1 teaspoon vanilla extract

A pinch of salt

Optional toppings: chopped nuts, shredded coconut, or granola

Instructions

Prepare the Bananas: Peel the ripe bananas and slice them into small rounds. Set aside half for blending and the other half for layering in the cups.

Blend the Cream: In a blender, combine the chilled coconut cream, honey (or maple syrup), vanilla extract, and a pinch of salt. Blend until smooth and creamy.

Add Bananas: Add the sliced bananas that you reserved for blending into the mixture. Blend again until the bananas are fully incorporated, creating a thick, creamy texture.

Incorporate Berries: Gently fold in the mixed berries, reserving a few for the top if desired, until evenly distributed.

Layer the Cups: In silicone cups or small ramekins, start by layering a spoonful of the banana-berry mixture at the bottom. Add a few banana slices, then another layer of the mixture. Repeat until the cups are full, finishing with the berry mixture on top.

Freeze: Place the cups in the freezer for at least 4 hours or until fully set.

Serve: To serve, let the cups sit at room temperature for a few minutes to soften slightly. If desired, top with optional toppings like chopped nuts, shredded coconut, or granola for added texture and flavor. Enjoy your refreshing treat!
