2 large apples (such as Granny Smith or Honeycrisp), peeled and diced

1 teaspoon lemon juice

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1/4 cup brown sugar

1 tablespoon cornstarch

1 package of store-bought crescent roll dough

1 egg, beaten (for egg wash)

1 teaspoon sugar (for sprinkling)

Instructions
 

Prep the Apples: In a medium bowl, combine the diced apples, lemon juice, cinnamon, nutmeg, brown sugar, and cornstarch. Toss until the apples are well-coated. Let the mixture sit for about 10 minutes to allow the flavors to meld.

    Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

      Open the Crescent Rolls: Unroll the crescent roll dough on a lightly floured surface and separate it into triangles according to the perforations in the dough.

        Fill the Dough: Place a generous tablespoon of the apple mixture in the center of each crescent roll triangle. Fold the dough over the filling to form a pocket or small bundle, pinching the edges to seal well.

          Egg Wash & Sprinkle: Brush the tops of the sealed bites with the beaten egg and sprinkle a tiny pinch of sugar over each for a sweet crunch.

            Bake: Arrange the filled bites on the prepared baking sheet and bake in the preheated oven for about 12–15 minutes or until golden brown and puffed.

              Cool and Freeze: Allow the apple pie bites to cool on a wire rack for 10 minutes. After cooling, place them on a baking sheet lined with parchment and freeze for about an hour until firm. Transfer the bites to an airtight container or freezer bag for long-term storage.

                Serving: When ready to enjoy, you can either enjoy them straight from the freezer or bake them for an additional 5-7 minutes in a preheated oven to warm them up.
