Filipino Lumpia with Sauce

For the Lumpia:

1 pound ground pork (or chicken)

1 cup finely chopped carrots

1 cup finely chopped green beans

1 cup bean sprouts

½ cup chopped onions

2 cloves garlic, minced

1 teaspoon soy sauce

1 teaspoon oyster sauce

1/2 teaspoon ground black pepper

1 package lumpia wrappers (approximately 20-30)

1 egg, beaten (for sealing)

Oil for frying

For the Sweet Chili Sauce:

1 cup sugar

1/2 cup water

1/4 cup vinegar

2 tablespoons chili flakes (adjust according to spice preference)

1 tablespoon cornstarch mixed with 2 tablespoons of water (slurry)

1 teaspoon garlic powder (optional)

Instructions
 

Prepare the Filling:

    - In a large bowl, combine the ground pork (or chicken), chopped carrots, green beans, bean sprouts, onions, and minced garlic. Mix well.

      - Add in the soy sauce, oyster sauce, and ground black pepper. Combine thoroughly and set aside.

        Wrap the Lumpia:

          - Take one lumpia wrapper and place it on a flat surface with one corner pointing towards you.

            - Place about 1-2 tablespoons of the filling near the corner closest to you.

              - Fold the corner over the filling, then fold the sides toward the center and roll tightly. Seal the edge with the beaten egg. Repeat for the remaining wrappers and filling.

                Make the Sweet Chili Sauce:

                  - In a saucepan, combine the sugar, water, vinegar, and chili flakes over medium heat.

                    - Stir until the sugar completely dissolves and bring it to a gentle boil.

                      - Add the cornstarch slurry to the mix, stirring continuously until the sauce thickens. Remove from heat and stir in garlic powder if desired. Allow to cool.

                        Fry the Lumpia:

                          - In a deep skillet or frying pan, heat oil over medium heat. You'll know it's hot enough when you drop a small piece of lumpia wrapper into the oil and it sizzles.

                            - Fry the lumpia in batches until they are golden brown and crispy on all sides, about 3-4 minutes per batch. Make sure not to overcrowd the pan.

                              - Use a slotted spoon to remove them from the oil and place them on paper towels to drain excess oil.

                                Serve:

                                  - Arrange the crispy lumpia on a plate and serve with the sweet chili sauce on the side for dipping. Enjoy the delightful crunch and flavorful filling!
