2 cups cooked jasmine rice (preferably day-old)

1 cup mixed vegetables (carrots, peas, bell peppers, and corn)

1/2 cup green onions, chopped

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

1 tablespoon vegetable oil

2 large eggs (optional – can be omitted for a vegan version)

Salt and pepper to taste

Sesame seeds for garnish (optional)

Fresh cilantro for garnish (optional)

Instructions
 

Prepare Ingredients: If you haven’t already, cook the jasmine rice ahead of time and let it cool. Cold rice works best for fried rice because it prevents it from becoming mushy. Chop the vegetables and green onions, and mince the garlic and ginger.

    Heat the Pan: In a large skillet or wok, heat the vegetable oil over medium-high heat. Once hot, add the minced garlic and grated ginger. Sauté for about 30 seconds until fragrant.

      Cook Vegetables: Add the mixed vegetables to the skillet. Stir-fry for about 3-5 minutes or until the vegetables are tender but still crisp. If using fresh veggies, they may take a little longer.

        Scramble Eggs (if using): Push the vegetables to one side of the pan. Crack the eggs directly into the skillet on the empty side, scrambling them until cooked through. Once done, mix the eggs with the vegetables.

          Add Rice: Add the cold, cooked rice to the skillet. Break up any clumps with a spatula and stir everything together.

            Season: Pour in the soy sauce and sesame oil. Mix well to combine all the flavors and ensure the soy sauce is evenly distributed. Season with salt and pepper to taste.

              Finish with Green Onions: Stir in the chopped green onions and cook for an additional 1-2 minutes until everything is heated through.

                Serve: Remove from heat and transfer to a serving dish. Garnish with sesame seeds and fresh cilantro if desired. Enjoy your colorful, delicious veggie fried rice!
