Eggplant Cucumber Tacos

Ingredients
  

1 medium eggplant, diced into 1-inch cubes

1 large cucumber, finely diced

1 cup cherry tomatoes, halved

1 red onion, finely chopped

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper, to taste

8 small corn tortillas

Fresh cilantro, for garnish

Juice of 1 lime

Optional: sliced avocado and crumbled feta cheese

Instructions
 

Prepare the Eggplant:

    - Place the diced eggplant in a colander, sprinkle with salt, and let it sit for about 30 minutes. This will draw out excess moisture and bitterness. Rinse and pat dry.

      Cook the Eggplant:

        - In a large skillet over medium heat, add the olive oil. Once hot, add the rinsed eggplant and sauté for about 5-7 minutes, until softened and starting to brown. Stir in the minced garlic, smoked paprika, ground cumin, chili powder, salt, and pepper. Cook for another 2-3 minutes until fragrant.

          Mix the Vegetables:

            - In a large mixing bowl, combine the cooked eggplant mixture, diced cucumber, cherry tomatoes, and red onion. Squeeze the juice of 1 lime over the mixture and toss gently to combine. Adjust seasoning with more salt and pepper if needed.

              Warm the Tortillas:

                - In a dry skillet or over an open flame, warm the corn tortillas for about 15-30 seconds on each side, or until they are pliable and slightly charred.

                  Assemble the Tacos:

                    - Place a generous spoonful of the eggplant-cucumber mixture onto each tortilla. Optionally, top with sliced avocado and crumbled feta cheese for added creaminess and flavor.

                      Garnish and Serve:
