Ingredients

4 salmon fillets (6 oz each)

1 bunch of fresh asparagus (about 1 lb), trimmed

3 tablespoons olive oil

2 tablespoons fresh lemon juice

Zest of 1 lemon

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and freshly ground black pepper, to taste

Lemon slices for garnish

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Marinade: In a small bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper.

Arrange the Asparagus: On a large rimmed baking sheet, arrange the trimmed asparagus in a single layer. Drizzle with half of the lemon herb marinade, tossing to coat evenly.

Add the Salmon: Place the salmon fillets on the baking sheet alongside the asparagus. Pour the remaining marinade over the salmon fillets, ensuring they are well-coated.

Bake: Transfer the baking sheet to the preheated oven and bake for 15-20 minutes, or until the salmon flakes easily with a fork and the asparagus is tender-crisp.

Garnish and Serve: Once cooked, remove from the oven and garnish with fresh parsley and lemon slices. Serve immediately with your choice of rice, quinoa, or crusty bread for a complete meal.
