Easy One-Pan Lemon Garlic Shrimp and Asparagus

1 lb (450g) shrimp, peeled and deveined

1 bunch asparagus, trimmed and cut into 2-inch pieces

4 cloves garlic, minced

2 lemons (juice and zest of 1, slices of the other)

1/4 cup olive oil

1 tsp red pepper flakes (optional for spice)

Salt and pepper to taste

1/4 cup fresh parsley, chopped (for garnish)

Cooked rice or quinoa (for serving)

Instructions
 

Prep the pan: In a large non-stick skillet, heat olive oil over medium heat. Ensure the oil is evenly distributed across the bottom of the pan.

    Sauté garlic and asparagus: Add minced garlic to the skillet, stirring for about 30 seconds until fragrant. Then, add the asparagus pieces and sauté for about 4-5 minutes, until they start to become tender yet still crisp.

      Cook the shrimp: Push the asparagus to one side of the pan and add the shrimp to the other side. Season the shrimp with salt, pepper, and red pepper flakes (if using). Cook for 2-3 minutes on one side, then flip and cook for an additional 2-3 minutes until the shrimp are pink and opaque.

        Add flavor: Reduce the heat to low and drizzle in the juice and zest of one lemon. Gently toss everything in the pan to combine, ensuring the shrimp and asparagus are well-coated with the lemon-garlic mixture. Add the lemon slices for additional flavor.

          Garnish and serve: Remove the pan from the heat, sprinkle with fresh parsley, and serve immediately over cooked rice or quinoa, ensuring to drizzle the delicious lemon-garlic sauce over the top.
