8 oz (225g) spaghetti or fettuccine

2 cups fresh mushrooms, sliced (such as cremini or button)

4 cloves garlic, minced

1 medium onion, finely chopped

2 cups vegetable broth

1 cup heavy cream or coconut cream for a dairy-free option

1 cup grated Parmesan cheese (or nutritional yeast for vegan)

2 tbsp olive oil

1 tsp dried thyme

1 tsp dried oregano

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prep the Pasta: In a large deep skillet or a wide pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 2-3 minutes, until translucent.

    Cook the Mushrooms: Add the sliced mushrooms to the skillet and cook for another 5-7 minutes, stirring occasionally, until they are soft and browned. Stir in the minced garlic and cook for an additional minute, until fragrant.

      Combine Ingredients: Pour in the vegetable broth, dried thyme, and dried oregano. Stir well to combine and bring the mixture to a gentle simmer.
