1 lb (450g) ground beef

1 can (15 oz) kidney beans, rinsed and drained

1 can (15 oz) black beans, rinsed and drained

1 can (14 oz) diced tomatoes with green chilies

1 medium onion, chopped

3 cloves garlic, minced

2 tablespoons tomato paste

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup beef broth (or water)

Optional toppings: shredded cheese, sour cream, chopped green onions, cilantro

Instructions
 

Cook the Beef: In a large pot or Dutch oven over medium heat, add the ground beef and cook until browned, breaking it apart with a spatula (about 5-7 minutes). Drain excess fat if necessary.

    Sauté Aromatics: Add the chopped onion and minced garlic to the pot. Sauté for an additional 3-4 minutes until the onions become translucent.

      Stir in Tomato Paste and Spices: Mix in the tomato paste, chili powder, cumin, smoked paprika, salt, and pepper. Cook for about 1-2 minutes to enhance the flavors.

        Combine Beans and Tomatoes: Add the rinsed kidney beans, black beans, diced tomatoes with green chilies, and beef broth. Stir everything together well.

          Simmer: Bring the mixture to a gentle boil, then reduce the heat to low. Let it simmer for about 20-25 minutes, stirring occasionally. If you want a thicker chili, simmer it uncovered for the last 10 minutes.

            Taste and Adjust: Taste the chili and adjust the seasoning with more salt, pepper, or spices if desired.
