2 cups cooked chicken, shredded

1 cup BBQ sauce (your favorite brand)

2 cups shredded cheese (cheddar and mozzarella blend recommended)

4 large flour tortillas

1/2 cup red onion, thinly sliced

1/2 cup corn (canned or frozen, thawed)

1 jalapeño, sliced (optional, for a kick)

2 tablespoons olive oil

Fresh cilantro, chopped (for garnish)

Sour cream (for serving)

Avocado slices (for serving)

Instructions
 

Prepare the BBQ Chicken Filling: In a large bowl, mix the shredded chicken with the BBQ sauce until evenly coated. Adjust the amount of sauce according to your taste preference.

    Assemble the Quesadillas: On one half of each tortilla, place an equal portion of the BBQ chicken mixture. Top with a generous amount of shredded cheese, sliced red onion, corn, and jalapeño (if using). Fold the tortillas in half to enclose the filling.

      Cook the Quesadillas: Heat a large skillet over medium heat and add 1 tablespoon of olive oil. Once hot, add two quesadillas to the skillet. Cook for about 3-4 minutes on one side until golden brown and crispy. Carefully flip and add the remaining olive oil if needed. Cook for another 3-4 minutes on the other side until the cheese is melted and the tortilla is crispy.

        Repeat and Keep Warm: Remove the cooked quesadillas from the skillet and place them on a cutting board. Keep them warm while you repeat the cooking process with the remaining quesadillas.
