Ingredients

4 salmon fillets (about 6 oz each)

1 bunch of fresh asparagus, trimmed

2 tablespoons olive oil

1 lemon (zested and juiced)

3 cloves garlic, minced

1 teaspoon dried thyme (or 1 tablespoon fresh thyme)

1 teaspoon salt (to taste)

½ teaspoon black pepper

Lemon slices (for garnish)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Marinade: In a small bowl, whisk together the olive oil, lemon zest, lemon juice, minced garlic, dried thyme, salt, and black pepper until well combined.

Prep the Salmon and Asparagus: Place the salmon fillets in the center of the baking sheet, and arrange the trimmed asparagus around them. Drizzle half of the marinade over the salmon, making sure to coat each fillet evenly. Pour the remaining marinade over the asparagus.

Bake: Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. The asparagus should be tender-crisp when ready.

Garnish: Remove from the oven, and garnish the salmon with fresh lemon slices and chopped parsley for a pop of color and extra flavor.

Serve: Serve hot with your choice of side, such as quinoa or a simple green salad. Enjoy your delicious and healthy meal!
