1 large cucumber, thinly sliced

2-3 Hatch chilies, roasted, peeled, and chopped

8 cups of cold water

1 lime, juiced

Fresh mint leaves (a handful)

Ice cubes (optional)

Salt (a pinch, optional for a savory twist)

Instructions
 

Prepare the Ingredients: First, roast the Hatch chilies until they are blistered and charred. You can do this over an open flame or in the oven. Once roasted, place them in a bowl and cover with plastic wrap for about 10 minutes to steam. This makes peeling easier. After steaming, peel the skin off, remove the seeds if you prefer a milder flavor, and chop them into small pieces.

    Slice the Cucumber: While the chilies are steaming, wash and slice the cucumber into thin rounds. You can also choose to peel the cucumber if desired, although the skin adds a nice crunch and color.

      Combine Ingredients: In a large pitcher, combine the sliced cucumber, chopped Hatch chilies, fresh mint leaves, and lime juice. Gently muddle the ingredients with a wooden spoon to release their flavors.
