2 medium cucumbers, finely diced

3-4 Hatch green chilies, roasted, peeled, and chopped (adjust based on your spice preference)

1 small red onion, finely diced

1/4 cup fresh cilantro, chopped

1/4 cup rice vinegar

2 tablespoons lime juice

1 tablespoon honey or agave syrup

1 teaspoon cumin

Salt and pepper to taste

Prepare the Cucumbers: Begin by washing the cucumbers thoroughly. If desired, peel them before finely dicing into small cubes. Place them in a colander, sprinkle a little salt, and let them drain for about 15 minutes to remove excess water. This will help maintain the crunchy texture.

    Roast the Hatch Chilies: If you're using fresh Hatch chilies, roast them over an open flame (or under a broiler) until the skins are charred. Place them in a bowl, cover with plastic wrap for about 10 minutes, then peel off the skins, remove the seeds, and chop finely.

      Combine Ingredients: In a large mixing bowl, combine the diced cucumbers, roasted and chopped Hatch chilies, finely diced red onion, and chopped cilantro.

        Mix the Dressing: In a separate small bowl, whisk together the rice vinegar, lime juice, honey (or agave syrup), cumin, salt, and pepper until well combined.

          Combine and Chill: Pour the dressing over the cucumber mixture and gently toss everything together until well-coated. Taste and adjust the seasoning if necessary.

            Let it Rest: Cover the bowl with plastic wrap or transfer the relish to an airtight container. Refrigerate for at least 30 minutes to allow the flavors to meld. For best results, let it chill for a couple of hours.
