2 medium cucumbers

1 bell pepper (red, yellow, or green), diced

1 cup cherry tomatoes, halved

1 small red onion, finely chopped

1 cup corn kernels (fresh or canned)

1 avocado, diced

1/4 cup fresh cilantro, chopped

1/4 cup feta cheese, crumbled (optional)

1 lime (juiced)

2 tbsp olive oil

Salt and pepper to taste

1 tsp garlic powder

1 tsp cumin

1/2 tsp chili powder (optional for an extra kick)

Prepare the Cucumbers: Cut each cucumber in half lengthwise and scoop out the seeds using a spoon, creating “boats.” Place them cut side up on a serving platter.
