Crunchy Ranch Chickpea Wraps

1 can (15 oz) chickpeas, drained and rinsed

1 tablespoon olive oil

1 tablespoon ranch seasoning mix (store-bought or homemade)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup chopped fresh spinach or mixed greens

1/2 cup shredded carrots

1/2 cup diced cucumbers

1/2 cup cherry tomatoes, halved

4 large whole wheat tortillas or wraps

1/2 cup ranch dressing (for drizzling)

Optional: sliced avocado and grated cheese for added flavor

Prepare the Chickpeas: In a medium bowl, combine the drained and rinsed chickpeas, olive oil, ranch seasoning, garlic powder, onion powder, salt, and pepper. Toss gently until the chickpeas are evenly coated with the seasoning mixture.

    Toast the Chickpeas: Preheat the oven to 400°F (200°C). Spread the seasoned chickpeas on a baking sheet in a single layer. Roast for 20-25 minutes, tossing halfway through, until they are golden and crunchy. Let them cool slightly.

      Assemble the Wraps: Lay out the whole wheat tortillas on a clean surface. In the center of each tortilla, layer a handful of fresh spinach or mixed greens, a scoop of shredded carrots, diced cucumbers, and halved cherry tomatoes.

        Add Chickpeas: Spoon a generous amount of the crunchy ranch chickpeas on top of the vegetable layers.

          Drizzle with Dressing: Drizzle ranch dressing over the chickpeas and veggies for an extra burst of flavor. If using, add sliced avocado and a sprinkle of grated cheese on top.
