Crunchy Baked Zucchini Chips

2 medium zucchini

1 cup breadcrumbs (panko for extra crunch)

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon salt

¼ cup all-purpose flour

2 large eggs, beaten

Preheat the Oven: Preheat your oven to 225°F (110°C). Line two baking sheets with parchment paper or silicone mats.

    Slice the Zucchini: Wash and dry the zucchini, then slice them into thin rounds, about 1/8 inch thick. To achieve the best texture, try to keep the slices uniform in thickness.

      Prepare the Breading Stations:

        - In one shallow bowl, place the all-purpose flour.

          - In a second bowl, add the beaten eggs.

            - In a third bowl, mix together the breadcrumbs, Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and black pepper.

              Bread the Zucchini:

                - Dip each zucchini slice into the flour, coating it lightly. Shake off any excess flour.

                  - Next, dip it into the beaten eggs, ensuring it's fully coated.

                    - Finally, place the zucchini in the breadcrumb mixture, pressing lightly to adhere the crumbs. Repeat with all zucchini slices.

                      Arrange on Baking Sheet: Place the breaded zucchini chips in a single layer on the prepared baking sheets. Ensure they aren’t crowded for even cooking.

                        Spray for Crispiness: Lightly spray the tops of the zucchini chips with cooking spray or drizzle with olive oil to enhance crispiness.

                          Bake Slowly: Bake in the preheated oven for about 2 hours, flipping the chips halfway through, until they're golden brown and crispy. Keep an eye on them to prevent burning, as ovens can vary.

                            Cool and Serve: Once baked, remove the zucchini chips from the oven and let them cool slightly on the baking sheets. They will continue to crisp as they cool. Serve immediately with your favorite dip (like tzatziki or ranch) or enjoy them plain!
