2 ripe avocados, halved and pitted

1 cup seasoned breadcrumbs (Panko works well)

1/2 cup all-purpose flour

2 large eggs, beaten

1 teaspoon garlic powder

1 teaspoon chili powder

1/2 teaspoon salt

1/4 teaspoon black pepper

8 small corn tortillas

1 cup shredded lettuce

1/2 cup diced tomatoes

1/4 cup chopped cilantro

1 lime, cut into wedges

Optional: Sour cream or Greek yogurt for serving

Instructions
 

Prepare the Avocados:

    - Carefully scoop out the flesh of each avocado half, leaving the skin intact. If possible, keep them in one piece for easier handling.

      - Slice each avocado half into thick wedges.

        Set Up Breading Station:

          - In one shallow bowl, place the all-purpose flour.

            - In the second bowl, add the beaten eggs.

              - In a third bowl, combine the seasoned breadcrumbs, garlic powder, chili powder, salt, and black pepper.

                Bread the Avocado Wedges:

                  - Dip each avocado wedge first in the flour, shaking off excess.

                    - Next, dip it into the beaten eggs, ensuring it's fully coated.

                      - Finally, roll it in the breadcrumb mixture until well-covered. Set aside on a plate.

                        Air-Fry the Avocados:

                          - Preheat your air fryer to 400°F (200°C) for about 5 minutes.

                            - Lightly spray the air fryer basket with cooking spray. Place the breaded avocado wedges in a single layer, ensuring they don’t touch.

                              - Air-fry for 8-10 minutes or until the avocados are golden brown and crispy, flipping them halfway through.

                                Warm the Tortillas:

                                  - While the avocados are air-frying, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until pliable. You can also wet them slightly and wrap in a damp paper towel to microwave for 20-30 seconds.

                                    Assemble the Tacos:

                                      - Take a warm tortilla and layer a small handful of shredded lettuce, a few crispy avocado wedges, diced tomatoes, and chopped cilantro.

                                        - Squeeze fresh lime juice over the top for added flavor.

                                          Serve:

                                            - Repeat the assembling process for all tacos. Serve immediately with additional lime wedges and a side of sour cream or Greek yogurt if desired.
