1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup teriyaki sauce (store-bought or homemade)

2 tablespoons honey

1 tablespoon rice vinegar

2 teaspoons minced garlic

1 teaspoon minced ginger

1 teaspoon sesame oil

1 bell pepper (red or green), diced

1 small onion, diced

1 cup snap peas (optional, for crunch)

1 tablespoon cornstarch (optional, for thickening)

2 tablespoons water (optional, for thickening)

Cooked white or brown rice, for serving

Sesame seeds, for garnish

Chopped green onions, for garnish

Instructions
 

Prep the Chicken: Begin by cutting the chicken thighs into bite-sized pieces. Trim any excess fat and place them in the crockpot.

    Make the Sauce: In a bowl, whisk together the teriyaki sauce, honey, rice vinegar, minced garlic, minced ginger, and sesame oil until well combined.

      Combine: Pour the sauce mixture over the chicken in the crockpot. Add the diced bell pepper, onion, and snap peas, stirring to combine all the ingredients.

        Cook: Cover the crockpot and set it to low heat. Let it cook for about 4-5 hours or high heat for 2-3 hours, until the chicken is tender and fully cooked.

          Thicken the Sauce (optional): If you prefer a thicker sauce, mix cornstarch with water in a small bowl to create a slurry. About 30 minutes before serving, add the slurry to the crockpot and stir well. Cover and continue to cook until the sauce thickens.

            Serve: Once done, fluff the chicken bites and veggies in the sauce using a fork. Serve over a bed of cooked rice, and top with sesame seeds and chopped green onions for garnish.
