Crockpot Chili Mac and Cheese

1 medium onion, diced

2 cloves garlic, minced

2 cups elbow macaroni

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (28 oz) crushed tomatoes

1 can (6 oz) tomato paste

3 cups beef broth (or vegetable broth)

2 tablespoons chili powder

1 teaspoon cumin

1 teaspoon paprika

1 teaspoon oregano

1 teaspoon salt (or to taste)

1/2 teaspoon black pepper

1/2 teaspoon cayenne pepper (optional, for heat)

2 cups shredded cheddar cheese (divided)

1 cup sour cream (for serving)

Chopped green onions and cilantro (for garnish)

Instructions
 

Brown the Meat: In a skillet over medium-high heat, brown the ground beef (or turkey) until fully cooked. Drain excess fat. Add diced onion and garlic, cooking until the onion is translucent (about 3-4 minutes). Transfer this mixture to the crockpot.

    Combine the Ingredients: In the crockpot, add the elbow macaroni, kidney beans, black beans, crushed tomatoes, tomato paste, beef broth, chili powder, cumin, paprika, oregano, salt, black pepper, and cayenne pepper (if using). Stir well to combine all ingredients.

      Cook: Cover the crockpot and cook on low for about 6 hours or on high for 3 hours. Check for the pasta doneness and adjust cooking time accordingly.

        Add the Cheese: About 10-15 minutes before serving, stir in 1.5 cups of cheddar cheese into the chili mac mixture, allowing it to melt.
