Crockpot Balsamic Chicken and Mushroom Pasta

1.5 lbs boneless, skinless chicken breasts

8 oz baby bella mushrooms, sliced

1 medium onion, chopped

4 cloves garlic, minced

1 cup balsamic vinegar

1 cup low-sodium chicken broth

2 tbsp honey

2 tbsp soy sauce

1 tsp dried oregano

1/2 tsp red pepper flakes (adjust to taste)

Salt and pepper to taste

12 oz pasta (penne or fettuccine works well)

Fresh basil or parsley for garnish

Grated Parmesan cheese for serving

Instructions
 

Prepare the Crockpot: Start by placing the chicken breasts at the bottom of the crockpot. The chicken will absorb all the flavors as it cooks.

    Add Vegetables: Layer the sliced baby bella mushrooms, chopped onion, and minced garlic over the chicken.

      Create the Sauce: In a separate bowl, whisk together the balsamic vinegar, chicken broth, honey, soy sauce, dried oregano, and red pepper flakes. Season with salt and pepper to taste.

        Combine Everything: Pour the balsamic sauce evenly over the chicken and vegetables in the crockpot. Make sure everything is well coated.
