Ingredients

2 large sweet potatoes, peeled

3 tablespoons cornstarch

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

Optional toppings: fresh herbs, parmesan cheese, or your favorite dipping sauce

Instructions

Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Cut the Sweet Potatoes: Using a waffle fry cutter or a sharp knife, slice the peeled sweet potatoes into waffle fry shapes. If you don't have a cutter, aim for diagonal cuts to create a crisscross pattern.

Prepare the Coating: In a large mixing bowl, combine the cornstarch, olive oil, garlic powder, smoked paprika, salt, and black pepper. Mix well until it forms a paste.

Coat the Sweet Potatoes: Add the sweet potato fries to the bowl and toss them in the cornstarch mixture until they are evenly coated.

Spread on Baking Sheet: Arrange the coated sweet potato fries in a single layer on the prepared baking sheet. Make sure they are not overcrowded; use two baking sheets if necessary for even cooking.

Bake: Bake in the preheated oven for 20-25 minutes, flipping the fries halfway through the cooking time. Make sure they're crispy and lightly browned.

Check for Crispiness: For additional crispiness, broil for an additional 2-3 minutes at the end of the baking time, but watch carefully to avoid burning.

Serve: Remove from the oven and let cool for a few minutes. Serve warm with your favorite toppings or dipping sauce.
