4 medium zucchini, sliced into ½-inch rounds

½ cup grated Parmesan cheese

1 cup panko breadcrumbs

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

½ teaspoon salt

½ teaspoon black pepper

2 large eggs

¼ cup all-purpose flour

Olive oil spray (or light drizzle of olive oil)

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Coatings: In a shallow bowl, whisk together the eggs. In another bowl, combine the flour, garlic powder, onion powder, oregano, salt, and pepper. In a third bowl, mix the panko breadcrumbs with the grated Parmesan cheese.

      Coat the Zucchini:

        - Dip each zucchini slice into the flour mixture, shaking off any excess.
