Instructions

Marinate the Chicken: In a medium bowl, add the buttermilk and season with salt and pepper. Submerge the chicken thighs in the buttermilk and let them marinate for at least 30 minutes (or up to overnight in the fridge for best flavor).

Prepare the Coating: In a shallow dish, combine the flour, paprika, garlic powder, onion powder, cumin, chili powder, salt, and pepper. In another dish, add the breadcrumbs.

Dredge the Chicken: Remove the chicken from the buttermilk, allowing excess to drip off. First, coat each piece in the flour mixture, then dip in the breadcrumbs, pressing lightly to adhere.

Fry the Chicken: In a deep skillet or frying pan, heat about 1/2 inch of vegetable oil over medium-high heat. Once hot, carefully add the breaded chicken thighs in batches, cooking for about 5-6 minutes on each side until golden brown and cooked through. Remove and place on paper towels to drain excess oil.

Make the Avocado Lime Sauce: In a blender or food processor, combine the avocado, Greek yogurt, lime juice, minced garlic, salt, and pepper. Blend until smooth and creamy. Adjust seasoning to taste and set aside.

Warm the Tortillas: In a dry skillet, heat the tortillas one at a time for about 30 seconds on each side, until warm and flexible.

Assemble the Tacos: Slice the crispy chicken into strips. On each tortilla, layer shredded lettuce or cabbage, diced tomatoes, and a generous portion of the crispy chicken. Drizzle with avocado lime sauce and sprinkle with crumbled queso fresco.

Serve and Enjoy: Serve the tacos immediately with lime wedges on the side for extra zest. Enjoy your deliciously crispy chicken tacos!
