2 large sweet potatoes

2 tablespoons olive oil

1 tablespoon cornstarch

1 tablespoon Cajun seasoning (adjust to taste)

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

Optional: fresh parsley, chopped, for garnish

Optional: your favorite dipping sauce (like garlic aioli or ranch)
