2 cups cooked, shredded chicken

1 cup BBQ sauce (your favorite variety)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup diced red onion

1/2 cup corn (canned or frozen)

4 large flour tortillas

2 tablespoons olive oil

1 tablespoon fresh cilantro, chopped (for garnish)

Salt and pepper to taste

Sour cream or guacamole (for serving)

Marinate the Chicken: In a mixing bowl, combine the shredded chicken with BBQ sauce. Toss to ensure the chicken is well coated. Let it marinate for at least 15 minutes for the flavors to meld.

    Prepare Filling: In a large bowl, mix the marinated chicken, shredded cheddar cheese, shredded mozzarella cheese, diced red onion, and corn. Season with salt and pepper to taste.

      Assemble Quesadillas: Heat a large skillet over medium heat and add 1 tablespoon of olive oil. Place one flour tortilla in the skillet. On one half of the tortilla, spread a generous amount of the chicken and cheese mixture. Fold the other half of the tortilla over the top to create a semi-circle.

        Cook the Quesadilla: Cook the quesadilla for about 3-4 minutes on one side until golden brown and crispy. Carefully flip and cook on the other side for another 3-4 minutes until the cheese is melted and the tortilla is crispy. Repeat with remaining tortillas and filling, adding more oil to the skillet as needed.

          Slice and Serve: Remove the quesadillas from the skillet and let them cool slightly. Cut into wedges and garnish with fresh cilantro. Serve with sour cream or guacamole on the side for dipping.
