Crispy Baked Tacos with Ground Turkey

1 lb ground turkey

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon taco seasoning (store-bought or homemade)

1 can (15 oz) black beans, drained and rinsed

1 cup corn (canned or frozen)

1 cup shredded cheddar cheese

12 small corn tortillas

Cooking spray

Fresh cilantro, chopped (for garnish)

Sliced jalapeños (optional)

Salsa or sour cream (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Cook the Turkey: In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for another 1 minute, stirring frequently. Add the ground turkey and cook until browned, breaking it apart with a spatula, around 5-7 minutes.

      Season the Mixture: Sprinkle in the taco seasoning, stirring to coat the turkey evenly. Mix in the black beans and corn, cooking for an additional 2-3 minutes until everything is heated through. Remove from heat.

        Prepare the Tortillas: To achieve crispy tacos, you need to mold the tortillas. Lightly cover a muffin tin with cooking spray. In a frying pan, heat the corn tortillas for about 30 seconds on each side until pliable. Carefully press each tortilla into the muffin tin to create a taco shape.

          Fill the Taco Shells: Spoon the turkey mixture into each tortilla shell, filling them generously. Top each with shredded cheddar cheese.

            Bake to Perfection: Place the muffin tin in the preheated oven and bake for 12-15 minutes, or until the cheese is melted and the tortillas are crispy.

              Finish and Serve: Remove from the oven and allow the tacos to cool for a few minutes. Carefully lift them out of the muffin tin. Serve warm, garnished with fresh cilantro and sliced jalapeños, alongside salsa or sour cream for dipping.
