1 can (15 oz) chickpeas, drained and rinsed

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon garlic powder

½ teaspoon onion powder

¼ teaspoon salt

¼ teaspoon black pepper

1 bell pepper (any color), sliced

1 small red onion, sliced

2 cups cooked quinoa or brown rice

1 avocado, sliced

Fresh cilantro, for garnish

Lime wedges, for serving

Optional toppings: salsa, Greek yogurt or dairy-free yogurt, shredded cheese, jalapeños

Preheat the Oven: Preheat your oven to 400°F (200°C). Prepare a baking sheet lined with parchment paper.

    Season the Chickpeas: In a mixing bowl, combine the drained chickpeas with olive oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper. Toss the chickpeas well to ensure they are evenly coated.
