Ingredients

For the Chicken Tenders:

1 lb chicken breast, cut into strips

1 cup buttermilk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

Cooking spray or olive oil for drizzling

For the Sweet Potato Fries:

2 large sweet potatoes, peeled and cut into fries

2 tablespoons olive oil

1 teaspoon paprika

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon fresh parsley, chopped (for garnish)

Instructions

Prep the Chicken: In a large bowl, combine buttermilk, garlic powder, onion powder, smoked paprika, salt, and black pepper. Add the chicken strips, ensuring they are well coated. Cover and refrigerate for at least 30 minutes (up to 2 hours for more flavor).

Preheat the Oven: Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper.

Prepare the Sweet Potato Fries: In a bowl, toss the sweet potato fries with olive oil, paprika, garlic powder, salt, and black pepper until evenly coated. Spread them out on one of the prepared baking sheets in a single layer.

Prepare the Chicken Tenders: Remove the chicken from the buttermilk mixture, allowing excess to drip off. In a shallow dish, mix panko breadcrumbs and grated Parmesan. Dredge each chicken strip in the breadcrumb mixture until thoroughly coated, pressing gently to adhere.

Bake the Chicken Tenders: Place the coated chicken tenders on the second baking sheet. Lightly spray with cooking spray or drizzle with olive oil. Bake the chicken and sweet potato fries in the preheated oven: the fries bake for about 25-30 minutes (turning halfway), and the chicken tenders bake for about 20-25 minutes (or until golden brown, cooked through, and crispy).

Finish and Serve: Once both the chicken tenders and sweet potato fries are crispy and golden, remove from the oven. Let cool for a few minutes. Garnish the sweet potato fries with fresh parsley before serving.

Enjoy: Serve your Crispy Baked Chicken Tenders with Sweet Potato Fries hot, with your favorite dipping sauces like honey mustard or barbecue sauce!
