2 ripe avocados

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon cumin

Salt and pepper to taste

1 tablespoon olive oil

1/2 cup fresh cilantro, chopped (for garnish)

1 lime, cut into wedges (for serving)

Optional toppings: diced tomatoes, shredded lettuce, sour cream, or salsa

Instructions
 

Preheat the Oven: Start by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper and set it aside.

    Prepare the Avocados: Cut the avocados in half, remove the pit, and scoop out the flesh. Cut each half into wedges (about 6-8 wedges per avocado half).

      Set Up Breading Station: In three separate shallow bowls, place flour in the first bowl. In the second bowl, whisk the eggs until frothy. In the third bowl, mix panko breadcrumbs with garlic powder, paprika, cumin, salt, and pepper.

        Bread the Avocado Wedges: Take each avocado wedge and coat it in flour first, shaking off the excess. Then dip it into the egg mixture, and finally coat it with the seasoned panko breadcrumbs, pressing gently to ensure the breadcrumbs stick well.

          Arrange on Baking Sheet: Place the breaded avocado wedges on the prepared baking sheet. Drizzle olive oil evenly over them to help achieve a crispy texture.

            Bake: Bake in the preheated oven for 15-20 minutes or until the edges are golden brown and crispy. Flip the avocado slices halfway through the baking time to ensure even crispiness.
