1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

2 large eggs

2 tablespoons olive oil

Fresh parsley (for garnish, optional)

Prepare the Eggplant: Slice the eggplant into 1/4-inch thick rounds. Place the rounds in a colander, sprinkle with salt, and let them sit for about 20 minutes to draw out excess moisture and bitterness. Rinse the slices under cold water and pat dry with paper towels.

    Set Up Breading Station: In one bowl, whisk the eggs. In another bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and black pepper.

      Coat the Eggplant: Dip each eggplant slice into the egg mixture, letting the excess drip off. Then, dredge it in the breadcrumb mixture until fully coated. Press gently to ensure the breadcrumbs adhere well.

        Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.
