12 oz spaghetti (or your preferred pasta)

2 tablespoons olive oil

3 cloves garlic, minced

Zest of 2 large lemons

1 cup heavy cream

1/2 cup grated Parmesan cheese

1/4 cup fresh lemon juice (about 2 lemons)

Salt and pepper, to taste

1 cup fresh spinach leaves, roughly chopped

Fresh basil or parsley, for garnish

Extra lemon zest for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Prepare the Sauce: In a large skillet over medium heat, heat the olive oil. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

      Create the Creamy Base: Lower the heat to medium-low, and add in the heavy cream. Stir continuously while bringing it to a slight simmer.

        Add Flavors: Mix in the lemon zest and fresh lemon juice, stirring well to combine. Gradually add in the grated Parmesan cheese and continue stirring until the cheese is fully melted and the sauce is creamy. If the sauce is too thick, add some reserved pasta water to reach your desired consistency.
