1 can (15 oz) white beans (cannellini or great northern), drained and rinsed

1 tablespoon olive oil

1 medium onion, chopped

3 garlic cloves, minced

4 cups vegetable broth

2 cups fresh spinach, chopped

1 cup coconut milk (or heavy cream for a non-vegan option)

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and black pepper, to taste

2 tablespoons lemon juice

Optional: Crusty bread for serving

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes, or until it becomes translucent. Add the minced garlic and sauté for another 1-2 minutes until fragrant.

    Add Broth and Beans: Pour in the vegetable broth and add the drained white beans. Stir in the thyme and smoked paprika. Bring the mixture to a gentle simmer and let it cook for about 10 minutes, allowing the flavors to meld.

      Blend the Soup: Using an immersion blender, carefully blend the soup until smooth. If you don't have an immersion blender, transfer the mixture (in batches) to a countertop blender and blend until creamy, then return it to the pot.

        Stir in Coconut Milk and Spinach: Stir in the coconut milk and chopped spinach. Allow the soup to simmer for another 5 minutes, until the spinach is wilted and tender.

          Season and Finish: Add salt, black pepper, and lemon juice to taste. Stir well to combine all flavors.

            Serve: Ladle the creamy white bean spinach soup into bowls and serve hot. Optionally, pair with crusty bread for dipping.
