Creamy Sun-Dried Tomato Pesto Pasta

12 oz (340 g) pasta of your choice (like fettuccine or penne)

1 cup sun-dried tomatoes in oil, drained and roughly chopped

1 cup fresh basil leaves, packed

1/4 cup pine nuts, toasted (you can also use walnuts)

2 cloves garlic, minced

1/2 cup grated Parmesan cheese (plus extra for serving)

1 cup heavy cream (or a dairy-free alternative for a lighter version)

2 tablespoons olive oil

Salt and pepper, to taste

Red pepper flakes, to taste (optional)

Fresh basil leaves, for garnish

Cook Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water before draining the pasta.

    Make the Pesto: In a food processor, combine the sun-dried tomatoes, fresh basil, toasted pine nuts, minced garlic, Parmesan cheese, and olive oil. Pulse until smooth. If necessary, add a splash of the reserved pasta water to achieve your desired consistency. Season with salt and pepper to taste.

      Combine Cream and Pesto: In a large skillet over medium heat, pour in the heavy cream and bring it just to a simmer. Lower the heat and stir in the sun-dried tomato pesto mixture.
