Creamy Sun-Dried Tomato Chicken Pasta

8 ounces fettuccine pasta

2 tablespoons olive oil

1 pound chicken breast, thinly sliced

Salt and pepper, to taste

4 cloves garlic, minced

1 cup sun-dried tomatoes in oil, drained and chopped

1 cup heavy cream

1 cup chicken broth

1 teaspoon Italian seasoning

½ cup grated Parmesan cheese

1 cup fresh spinach leaves

Fresh basil, for garnish

Extra Parmesan cheese, for serving

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package directions until al dente. Drain and set aside.

    Cook the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the sliced chicken breast with salt and pepper. Add the chicken to the skillet and cook until browned and cooked through, about 7-8 minutes. Remove the chicken from the skillet and set aside.

      Sauté Aromatics: In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn the garlic.

        Add Sun-Dried Tomatoes & Cream: Add the chopped sun-dried tomatoes to the skillet and stir for a couple of minutes. Then pour in the heavy cream and chicken broth, stirring to combine. Bring to a simmer.

          Season the Sauce: Sprinkle in the Italian seasoning and stir well. Allow the sauce to simmer for about 5-7 minutes, letting it thicken slightly.

            Finish the Sauce: Stir in the grated Parmesan cheese and fresh spinach leaves. Cook until the spinach has wilted and the cheese is melted, about 2-3 minutes.

              Combine Pasta and Chicken: Add the cooked fettuccine and the chicken back to the skillet. Toss everything together to coat the pasta and chicken in the creamy sun-dried tomato sauce.

                Serve: Remove from heat and garnish with fresh basil and additional Parmesan cheese if desired. Serve immediately.
