Creamy Sun-Dried Tomato Chicken

4 boneless, skinless chicken breasts

1/2 cup sun-dried tomatoes, chopped (packed in oil for more flavor)

1 cup heavy cream

1 cup chicken broth

1 cup spinach, chopped (fresh or frozen)

1/2 cup grated Parmesan cheese

3 cloves garlic, minced

1 teaspoon dried Italian herbs (or a mix of basil, oregano, and thyme)

2 tablespoons olive oil

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

Prepare the Chicken: Season the chicken breasts on both sides with salt and pepper.

    Sear the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken breasts and sear for about 5-7 minutes on each side or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté Garlic and Tomatoes: In the same skillet, reduce the heat to medium and add minced garlic. Sauté for about 1 minute until fragrant. Then, add the chopped sun-dried tomatoes and cook for an additional 2 minutes.

        Create the Sauce: Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet. Let it simmer for 2-3 minutes. Then, reduce the heat to low and stir in the heavy cream, followed by the grated Parmesan cheese. Mix well until the cheese melts and the sauce is creamy.

          Add Spinach: Stir in the chopped spinach and dried Italian herbs. Cook for another 2-3 minutes until the spinach is wilted and the sauce is slightly thickened.

            Combine Everything: Return the seared chicken to the skillet, spooning the creamy sauce over each piece. Let the chicken simmer in the sauce for about 5 more minutes, allowing the flavors to meld together.

              Serve: Garnish with fresh basil leaves if desired. Serve hot over pasta, rice, or with a side of crusty bread to soak up the delicious sauce.
