Creamy Spinach Ricotta Shells

20 large jumbo pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup mozzarella cheese, shredded (plus extra for topping)

1/2 cup Parmesan cheese, grated

1 large egg

2 cloves garlic, minced

1/4 teaspoon nutmeg

Salt and pepper to taste

2 cups marinara sauce

1 tablespoon olive oil

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C).

    Cook the pasta: In a large pot, bring salted water to a boil and cook the jumbo shells according to package instructions, usually about 10-12 minutes until al dente. Drain and set aside.

      Prepare the filling: In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and let it cool slightly.

        Mix the cheese filling: In a large mixing bowl, combine the ricotta cheese, cracked egg, shredded mozzarella cheese, grated Parmesan cheese, nutmeg, and the cooked spinach mixture. Season with salt and pepper.

          Stuff the shells: Carefully stuff each cooked pasta shell with a generous amount of the spinach and cheese mixture.

            Assemble the dish: In a large baking dish, spread 1 cup of marinara sauce evenly along the bottom. Place the stuffed shells seam-side up in the baking dish. Once all shells are in place, pour the remaining marinara sauce over the tops. Sprinkle extra shredded mozzarella on top of the sauce for a cheesy crust.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and lightly browned.

                Garnish and serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves if desired. Serve warm and enjoy your delicious creamy spinach ricotta shells!
