8 ounces of fettuccine or your favorite pasta

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 ounces cremini or button mushrooms, sliced

6 cups fresh spinach (about 1 bag)

1 cup heavy cream

1 cup vegetable or chicken broth

1 teaspoon dried thyme

Salt and pepper to taste

½ cup grated Parmesan cheese

Red pepper flakes (optional, for heat)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

    Sauté Aromatics: In a large skillet over medium heat, heat the olive oil. Add the chopped onion and sauté for about 3-4 minutes until softened. Add the minced garlic and sauté for another minute, stirring frequently to prevent burning.

      Cook the Mushrooms: Add the sliced mushrooms to the skillet. Cook for about 5-7 minutes until they release their moisture and become golden brown. Season with salt, pepper, and dried thyme.

        Add Spinach: Stir in the fresh spinach, cooking until it wilts, about 2-3 minutes.

          Make the Cream Sauce: Pour in the heavy cream and vegetable or chicken broth. Stir well to combine, and let simmer for about 5 minutes until slightly thickened.

            Combine Pasta: Add the cooked pasta to the skillet along with the reserved pasta water. Toss everything together until the pasta is well coated in the creamy sauce. Stir in the grated Parmesan cheese until it melts into the sauce.

              Adjust Seasoning: Taste and adjust the seasoning with additional salt, pepper, or red pepper flakes for a little heat.
